  • 2 tablespoons Butter Can use olive oil for a lighter touch.

  • 1 teaspoon Salt

Cooking Instructions
  1. Preheat your oven to 180°C (350°F). Grease your large ovenproof casserole dish with butter or oil.
  2. Layer a quarter of the sliced potatoes in the greased dish, then add a third of the chopped onions and carrots, followed by a layer of corned beef. Season with salt and pepper.
  3. Repeat layering two more times with the remaining potatoes, onions, carrots, and corned beef, ensuring each layer is seasoned.
  4. Pour the beef stock evenly over the layers, then brush melted butter on top.
  5. Cover the dish tightly with parchment paper and foil, then bake for 50 minutes.
  6. Remove the cover and bake for an additional 15 to 20 minutes until the top is golden brown and crispy.
  7. Let the dish rest for a few minutes before serving. Enjoy warm with crusty bread.
