- Preheat your oven to 180°C (350°F). Grease your large ovenproof casserole dish with butter or oil.
- Layer a quarter of the sliced potatoes in the greased dish, then add a third of the chopped onions and carrots, followed by a layer of corned beef. Season with salt and pepper.
- Repeat layering two more times with the remaining potatoes, onions, carrots, and corned beef, ensuring each layer is seasoned.
- Pour the beef stock evenly over the layers, then brush melted butter on top.
- Cover the dish tightly with parchment paper and foil, then bake for 50 minutes.
- Remove the cover and bake for an additional 15 to 20 minutes until the top is golden brown and crispy.
- Let the dish rest for a few minutes before serving. Enjoy warm with crusty bread.
