Step-by-Step Instructions
  1. Wash the carrots thoroughly under running water, peel them, and chop into smaller 1-2 inch pieces.
  2. Peel and slice the ginger into smaller chunks, and juice the lemon, straining any seeds.
  3. Combine carrots and ginger in a juicer or blender. Blend until smooth, adding a splash of water if necessary, then strain to remove pulp.
  4. Taste the juice and adjust the flavors by adding chopped apple or lemon juice as desired.
  5. Pour over ice and garnish with fresh mint leaves before serving.
