Method
 

Cooking Steps
  1. Bring 4 cups of salted water to a boil. Add 1 cup of orzo pasta and cook for 8–10 minutes. Drain and set aside.
  2. Heat 1 tablespoon of olive oil in a large skillet. Season 1 pound of chicken with salt, pepper, and oregano. Sauté chicken for 5–7 minutes until golden and cooked through, then remove from pan.
  3. Add another tablespoon of olive oil, garlic, and mixed vegetables to the skillet. Cook for 3–4 minutes until veggies are tender and vibrant.
  4. Combine chicken, orzo, lemon juice and zest, and broth in the skillet. Stir well and heat through for 2–3 minutes.
  5. Taste and adjust seasoning as needed, then serve garnished with fresh parsley.
