Cooking Steps
- Bring 4 cups of salted water to a boil. Add 1 cup of orzo pasta and cook for 8–10 minutes. Drain and set aside.
- Heat 1 tablespoon of olive oil in a large skillet. Season 1 pound of chicken with salt, pepper, and oregano. Sauté chicken for 5–7 minutes until golden and cooked through, then remove from pan.
- Add another tablespoon of olive oil, garlic, and mixed vegetables to the skillet. Cook for 3–4 minutes until veggies are tender and vibrant.
- Combine chicken, orzo, lemon juice and zest, and broth in the skillet. Stir well and heat through for 2–3 minutes.
- Taste and adjust seasoning as needed, then serve garnished with fresh parsley.
