  • 1 tablespoon freshly grated ginger adjust quantity if using ground ginger
For the Beef
  • 2 tablespoons sesame oil use vegetable oil if unavailable
  • 1 pound Korean BBQ beef can substitute with chicken, pork, or tofu
For the Rice Stack
  • 2 cups cooked rice short or medium grain works best; cauliflower rice as a low-carb alternative
  • 1 cup cucumbers may substitute with radishes or shredded carrots
  • 0.5 cups chopped green onions chives or shallots can be used if needed
  • 2 tablespoons sesame seeds omit if allergic
  • 0.5 cups kimchi pickled vegetables can be used if not available

Method
 

Step-by-Step Instructions
  1. In a medium bowl, whisk together ¼ cup of soy sauce, 2 tablespoons gochujang, 1 tablespoon rice vinegar, 1 tablespoon honey, 2 minced garlic cloves, and 1 tablespoon freshly grated ginger. Mix until smooth.
  2. Heat 2 tablespoons of sesame oil in a large skillet over medium-high heat, then add 1 pound of thinly sliced Korean BBQ beef and sauté for 5–7 minutes.
  3. Pour the prepared sauce over the beef, stirring to coat evenly and cook for an additional 2–3 minutes.
  4. In shallow bowls, place about ½ cup of warm cooked rice, top with caramelized beef.
  5. Garnish with sliced cucumbers, chopped green onions, and sesame seeds, and add kimchi on the side.
