- Preheat your oven to 180°C (350°F) and grease your pudding moulds or line a cake pan with parchment paper.
- In a mixing bowl, combine pitted dates with baking soda and pour boiling water over. Let sit for about 10 minutes.
- Mash the softened dates until smooth, resembling a thick paste.
- Cream together the softened butter and brown sugar until smooth and fluffy.
- Add eggs one at a time, mixing well after each addition.
- Fold in the flour and baking powder gradually until just combined.
- Gently fold in the mashed date mixture until fully incorporated.
- Pour the batter into the prepared pan and bake for approximately 35 minutes.
- Poke holes in the baked pudding and pour half of the butterscotch sauce over to soak in. Let sit for about 10 minutes.
- Serve warm with additional butterscotch sauce and a scoop of vanilla ice cream.
