  • 200 grams Pitted Dates Fresh, can be replaced with prunes if desired.
  • 1 teaspoon Baking Soda No substitutes necessary.
  • 250 ml Boiling Water Must be used boiling.
  • 150 grams Brown Sugar Can substitute with light brown sugar.
  • 100 grams Unsalted Butter Ensure it's softened for easy mixing.
  • 2 large Eggs Use room temperature for best results.
  • 180 grams Plain Flour Gluten-free flour can be used if needed.
  • 1 teaspoon Baking Powder Ensure it’s fresh for best results.
For the Butterscotch Sauce
  • 300 ml Thickened Cream Can substitute with heavy cream or coconut cream.
  • 1 teaspoon Vanilla Extract No substitutes needed.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 180°C (350°F) and grease your pudding moulds or line a cake pan with parchment paper.
  2. In a mixing bowl, combine pitted dates with baking soda and pour boiling water over. Let sit for about 10 minutes.
  3. Mash the softened dates until smooth, resembling a thick paste.
  4. Cream together the softened butter and brown sugar until smooth and fluffy.
  5. Add eggs one at a time, mixing well after each addition.
  6. Fold in the flour and baking powder gradually until just combined.
  7. Gently fold in the mashed date mixture until fully incorporated.
  8. Pour the batter into the prepared pan and bake for approximately 35 minutes.
  9. Poke holes in the baked pudding and pour half of the butterscotch sauce over to soak in. Let sit for about 10 minutes.
  10. Serve warm with additional butterscotch sauce and a scoop of vanilla ice cream.
