Step-by-Step Instructions

  2. Butterfly the chicken breasts and pound them to about ¼ inch thick for even cooking.
  3. Set up your breading station with bowls for flour, beaten eggs, and the breadcrumb mixture.
  4. Dredge each chicken cutlet in flour, dip in eggs, then coat with the breadcrumb mixture and place on the baking sheet.
  5. Bake the chicken for 30 minutes, flipping halfway through for even crispiness.
  6. Top each cutlet with marinara sauce and mozzarella, then broil for an additional 2 minutes until cheese is melted.
  7. Let it rest for a minute before serving warm, ideally with a side salad or whole wheat pasta.
