- Preheat your oven to 375°F (190°C) and spray a 13” x 9” casserole dish with cooking spray.
- In a large skillet, heat avocado oil over medium-high heat. Add chopped onion and sauté for 3-5 minutes until translucent.
- Add ground turkey to the skillet with the softened onion. Cook for 5-7 minutes until fully browned, stirring occasionally.
- Combine the diced bell pepper, minced garlic, chili powder, chicken broth, salsa, uncooked white rice, rinsed black beans, and green chiles in the casserole dish.
- Add the browned turkey and onion mixture to the casserole dish and stir until all ingredients are blended.
- Sprinkle shredded Colby Jack cheese evenly over the casserole mixture, then cover with aluminum foil.
- Bake the covered casserole in the preheated oven for 45 minutes.
- Remove the foil and switch the oven to High Broil. Broil for 5-8 minutes until cheese is golden brown.
- Let the casserole rest for a few minutes before serving.
