Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and spray a 13” x 9” casserole dish with cooking spray.
  2. In a large skillet, heat avocado oil over medium-high heat. Add chopped onion and sauté for 3-5 minutes until translucent.
  3. Add ground turkey to the skillet with the softened onion. Cook for 5-7 minutes until fully browned, stirring occasionally.
  4. Combine the diced bell pepper, minced garlic, chili powder, chicken broth, salsa, uncooked white rice, rinsed black beans, and green chiles in the casserole dish.
  5. Add the browned turkey and onion mixture to the casserole dish and stir until all ingredients are blended.
  6. Sprinkle shredded Colby Jack cheese evenly over the casserole mixture, then cover with aluminum foil.
  7. Bake the covered casserole in the preheated oven for 45 minutes.
  8. Remove the foil and switch the oven to High Broil. Broil for 5-8 minutes until cheese is golden brown.
  9. Let the casserole rest for a few minutes before serving.
