- Preheat your air fryer to 375°F (190°C) for about 5 minutes.
- In a large mixing bowl, combine leftover mashed potatoes, mozzarella cheese, Parmesan cheese, salt, and pepper. Stir until blended smoothly.
- Scoop out about 1 ounce of the potato mixture and roll it into a ball shape. Repeat for the remaining mixture.
- Place breadcrumbs in a shallow dish and roll each potato ball in the breadcrumbs until evenly coated.
- Lightly coat each potato ball with cooking spray and arrange in a single layer in the air fryer basket.
- Air fry the potato balls for 10–12 minutes, gently shaking halfway through for even cooking.
- Remove from the fryer and allow to cool slightly. Serve warm with dips for a delightful snack.
