Ingredients
  

For the Udon
  • 8 oz Udon Noodles
For the Sauce
  • 3 tbsp Gochujang Korean red chili paste
  • 2 tbsp Butter or olive oil for dairy-free
  • 3 cloves Garlic minced
  • 1 medium Shallot finely chopped
  • 1 cup Heavy Cream or coconut cream for dairy-free
  • 2 tbsp Soy Sauce or tamari for gluten-free
  • 1 tsp Gochugaru Korean chili powder
Garnishes
  • 1/4 cup Parmesan Cheese optional
  • 2 tbsp Green Onion sliced
  • 1 medium Egg Yolk optional

Method
 

Cooking Instructions
  1. Bring a large pot of water to a boil. Add udon noodles and cook according to package instructions for 8-10 minutes. Reserve ½ cup of starchy noodle water, drain and rinse noodles.
  2. In a large skillet, melt butter over medium heat. Add minced garlic and chopped shallot. Sauté for about 2-3 minutes until fragrant and translucent.
  3. Stir in gochujang and cook for an additional 30 seconds to 1 minute.
  4. Pour in heavy cream and reserved noodle water. Add soy sauce and gochugaru. Simmer for 2-3 minutes until thickened.
  5. Add cooked udon noodles to the sauce and toss for 1-2 minutes to coat.
  6. Serve in bowls, garnished with parmesan cheese, green onions, and optional egg yolk.
