Method

Step-by-Step Instructions
  1. Begin by placing the ground chuck in a mixing bowl. Season your meat generously with salt, pepper, and minced garlic, then mix gently. Shape into equal-sized patties and refrigerate for 30 minutes.
  2. In a large skillet over medium heat, cook diced bacon until crispy (about 5-7 minutes). Remove half the grease, add chopped white onion, and cook until translucent (about 10 minutes). Stir in minced garlic, then return bacon to skillet. Incorporate brown sugar, bourbon, apple cider vinegar, and maple syrup. Simmer until thickened (10-15 minutes).
  3. Preheat your grill to medium-high heat (about 375°F). Grease lightly with cooking spray or wagyu tallow. Cook patties on grill for 4-6 minutes per side, flipping when golden brown. In the last 2 minutes, place a slice of American cheese on each patty to melt.
  4. Lightly toast the slider buns on the grill until golden. Place each patty on the bottom half of a toasted bun. Top with bacon jam, then cap with the top bun. Slice in half to serve warm.
