Ingredients
  

Spicy Ginger Syrup
  • 1/2 cup water
  • 1 tablespoon honey substitute with agave syrup for a vegan variant
  • 1 tablespoon fresh ginger finely sliced
  • 1 pinch cayenne pepper adjust based on spice tolerance
  • a handful mint leaves can be omitted if unavailable
Cocktail
  • 2 ounces pomegranate juice freshly squeezed is best
  • 1 ounce grapefruit juice or swap for orange juice
  • 1 ounce lime juice freshly squeezed is recommended
  • 2 ounces tequila omit for a non-alcoholic option
  • 1 splash ginger beer to top off the drink
Rim and Garnish
  • 1 tablespoon coarse sugar for rimming the glass
  • 1 tablespoon granulated sugar use alongside coarse sugar

Method
 

Spicy Ginger Syrup Preparation
  1. Combine ½ cup water, honey, finely sliced fresh ginger, and a pinch of cayenne pepper in a small saucepan. Bring to a boil over medium-high heat, then reduce and let simmer for 1-2 minutes. Remove, add mint leaves, steep for 10 minutes, then strain.
Rimming the Glass
  1. Mix coarse sugar, granulated sugar, and cayenne on a small plate. Use lime juice to wet the glass rim and dip into the sugar mixture.
Mixing the Cocktail
  1. Fill the glass with ice, add 2 ounces of pomegranate juice, 1 ounce each of grapefruit juice and lime juice, 1 ounce of spicy ginger syrup, and 2 ounces of tequila. Stir gently.
Adding the Fizz
  1. Top off with ginger beer, pouring slowly to maintain bubbles.
Garnishing and Serving
  1. Garnish with a sprig of mint, a lime slice, or pomegranate seeds.
