Step-by-Step Instructions
  1. In a large mixing bowl, combine orange juice, grapefruit juice, lime juice, olive oil, minced garlic, chopped white onion, salt, pepper, cumin, and oregano. Whisk until well blended.
  2. Submerge the whole cut-up chicken in approximately three-quarters of the marinade. Seal in a container or bag and refrigerate for a minimum of 24 hours.
  3. Preheat your grill to 400°F about 30 minutes before grilling. Arrange for dual-zone cooking with direct and indirect heat.
  4. Place the marinated chicken on the indirect heat side of the grill and close the lid. Grill for 20 minutes, occasionally basting with the reserved marinade.
  5. After 20 minutes, transfer the chicken pieces to the direct heat side and sear for 3 to 5 minutes, turning occasionally and continuing to baste.
  6. Check the internal temperature with a meat thermometer; it should reach at least 160°F. Let the chicken rest for 5 to 10 minutes.
  7. Slice and serve the grilled citrus chicken alongside Balsamic Tomato Salad for a complete meal.
