- In a large mixing bowl, combine orange juice, grapefruit juice, lime juice, olive oil, minced garlic, chopped white onion, salt, pepper, cumin, and oregano. Whisk until well blended.
- Submerge the whole cut-up chicken in approximately three-quarters of the marinade. Seal in a container or bag and refrigerate for a minimum of 24 hours.
- Preheat your grill to 400°F about 30 minutes before grilling. Arrange for dual-zone cooking with direct and indirect heat.
- Place the marinated chicken on the indirect heat side of the grill and close the lid. Grill for 20 minutes, occasionally basting with the reserved marinade.
- After 20 minutes, transfer the chicken pieces to the direct heat side and sear for 3 to 5 minutes, turning occasionally and continuing to baste.
- Check the internal temperature with a meat thermometer; it should reach at least 160°F. Let the chicken rest for 5 to 10 minutes.
