Ingredients
  

For the Salad
  • 8 oz Capellini or Angel Hair Pasta Gluten-free versions like Jovial spaghetti can also be used.
  • 2 each Lemons You can substitute one large lemon for both.
  • 2 tbsp Capers Opt for the smallest ones for concentrated flavor.
  • 1 cup Fresh Basil Leaves Feel free to swap with parsley if you prefer.
  • 0.5 cup Parmesan Cheese Freshly grated is preferred.
  • 1 tsp Garlic Powder
  • 1 tsp Salt
  • 1 pint Grape Tomatoes Halved to add to your salad.
  • 0.25 cup Olive Oil Extra virgin is recommended.

Method
 

Preparation Steps
  1. Fill a large pot with water and bring it to a rolling boil. Once boiling, add a tablespoon of salt and stir in the capellini pasta. Cook for 2 to 4 minutes until al dente. Drain and set aside to cool.
  2. In a medium mixing bowl, whisk together the lemon juice, olive oil, salt, and garlic powder until smooth.
  3. In a large mixing bowl, combine the cooled pasta, halved tomatoes, capers, and grated Parmesan. Drizzle the dressing over and toss to coat.
  4. Cover and refrigerate for at least 1 hour to allow flavors to meld.
  5. Before serving, add basil leaves and lemon zest. Top with additional Parmesan and capers if desired.
  6. Serve chilled with lemon wedges on the side.
