Ingredients
  

Salad Base
  • 4 cups shredded cabbage mix of green and purple cabbage recommended
  • 1 cup shredded carrots can substitute with shredded zucchini
  • ½ cup chopped fresh cilantro can be omitted or replaced with parsley
  • ¼ cup thinly sliced green onions chives can be used as substitute
Dressing
  • ½ cup mayonnaise swap with Greek yogurt for healthier option
  • 2 tablespoons lime juice juice of 2 limes
  • 2 tablespoons apple cider vinegar can substitute with white vinegar
  • 1 tablespoon sugar can use honey or agave syrup for natural sweetness
  • ½ teaspoon ground cumin omit for milder flavor
  • to taste salt adjust according to taste
  • to taste black pepper adjust according to taste
  • ½ teaspoon chili powder optional for extra spice

Method
 

Preparation
  1. Finely shred 4 cups of fresh cabbage and 1 cup of crisp carrots. In a large bowl, combine the shredded cabbage, carrots, ½ cup of chopped cilantro, and ¼ cup of thinly sliced green onions. Toss gently.
  2. In a small bowl, whisk together ½ cup of mayonnaise, juice of 2 limes, 2 tablespoons of apple cider vinegar, 1 tablespoon of sugar, ½ teaspoon of ground cumin, and salt and pepper. Optionally add ½ teaspoon of chili powder.
  3. Pour the dressing over the vegetable mixture and gently toss to coat everything evenly.
  4. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow flavors to meld.
  5. Before serving, give the salad another gentle toss. Adjust seasoning as needed and serve chilled.
