Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roll out thawed puff pastry sheets and cut into 4x4 inch squares, creating 8–10 squares.
  3. In a mixing bowl, combine sliced Honeycrisp apples, lemon zest, and honey until apples are well coated.
  4. Place a spoonful of apple mixture on each pastry square, then top with cheddar cheese, pecans, and thyme.
  5. Fold each square over the filling, sealing the edges and crimping with a fork.
  6. Whisk the egg and brush it over the tops of each bundle for a golden finish.
  7. Bake for 25–30 minutes or until golden brown and puffed.
