  • 1 cup Pistachios high-quality, unsalted, and unroasted
  • 1 cup Medjool Dates soaked if hard
  • 1 cup Almonds can substitute with walnuts or pecans
  • 1/4 cup Coconut Oil melted, vegan butter can be a substitute
Filling
  • 2 cups Cashew Nuts soaked overnight
  • 1 cup Coconut Milk use only the solid part
  • 1/4 cup Maple Syrup or any liquid sweetener
  • 1 tablespoon Lemon Juice freshly squeezed
Optional Toppings
  • Fresh Pistachios chopped coarsely
  • Fruits fresh berries or fruits
  • Chocolate Shavings

Method
 

Crust Preparation
  1. Blend 1 cup of pistachios, 1 cup of Medjool dates, and 1 cup of almonds in a food processor until crumbly. Pour in 1/4 cup melted coconut oil and blend until combined. Press mixture into a springform pan and chill for 30 minutes.
Filling Preparation
  1. In a high-speed blender, combine 2 cups soaked cashews, 1 cup solid coconut milk, 1/4 cup maple syrup, lemon juice, and a pinch of salt. Blend until smooth and creamy.
Combine Layers
  1. Pour the cashew filling over the chilled crust, spreading evenly with a spatula.
Chill
  1. Cover with plastic wrap and chill for at least 6-8 hours, or overnight, for optimal firmness.
Serve and Garnish
  1. Release from the springform pan, slice with a hot knife, and garnish with chopped pistachios, berries, or chocolate shavings.
