For the Pasta
  • 8 oz gluten-free pasta
For the Sauce
  • 2 tbsp olive oil or any plant-based oil
  • 3 cloves garlic freshly minced or roasted
  • 15 oz crushed tomatoes fresh tomatoes are a good substitute
  • nutritional yeast 1/4 cup adds cheesy flavor; can be omitted
  • 3 cups spinach can substitute with kale
  • 1/2 tsp chili flakes adjust to taste
  • 1 tbsp basil fresh or dried
Optional Add-ins
  • 1 cup bell peppers or zucchini
  • 1 cup chickpeas for added protein

Method
 

Cooking Process
  1. Bring a large pot of salted water to a rolling boil. Add pasta and cook until al dente, about 8-10 minutes. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat for about 2 minutes until shimmering.
  3. Add minced garlic to the skillet and sauté for about 1 minute until fragrant and lightly golden.
  4. Pour crushed tomatoes into the skillet with garlic, stir, and let simmer for 5-7 minutes.
  5. Stir in nutritional yeast and spinach, adding chili flakes. Cook for an additional 3-4 minutes.
  6. Gently fold in the cooked pasta and mix until well coated. Warm on the stove for about 2 minutes.
  7. Season with salt and pepper to taste. Serve hot, garnished with crushed red pepper and fresh basil.
