For the Filling
  • 2 medium caramelized onions Cook slowly until golden.
  • 2 cups spinach Use fresh or well-thawed frozen.
  • 1 tablespoon nutritional yeast Optional for cheesy flavor.
  • 1 cup marinara sauce Opt for a thick, well-seasoned sauce.

Method
 

Prepare the Dough
  1. In a large mixing bowl, combine warm water, sugar, and active dry yeast. Let sit until frothy.
  2. In another bowl, whisk together the bread flour and salt. Add olive oil and yeast mixture, mixing until dough forms.
  3. Knead for about 10 minutes until smooth and elastic. Cover and let rise for 1 hour or until doubled.
Cook the Filling
  1. Heat olive oil in a skillet over low heat. Add sliced onions and cook slowly until golden brown, about 25-30 minutes.
  2. Stir in spinach and cook for 2-3 minutes until wilted. Optionally mix in nutritional yeast and season to taste.
Assemble the Rolls
  1. Preheat your oven to 375°F (190°C). Roll out the dough on a floured surface.
  2. Spread marinara sauce, then add caramelized onion and spinach filling. Roll tightly and cut into 1-inch sections.
Bake the Rolls
  1. Place rolls in a greased baking dish and cover. Allow to rise for 30 minutes before baking.
  2. Bake for 25-30 minutes until golden brown. Enjoy warm!
