Prepare the Dough
- In a large mixing bowl, combine warm water, sugar, and active dry yeast. Let sit until frothy.
- In another bowl, whisk together the bread flour and salt. Add olive oil and yeast mixture, mixing until dough forms.
- Knead for about 10 minutes until smooth and elastic. Cover and let rise for 1 hour or until doubled.
Cook the Filling
- Heat olive oil in a skillet over low heat. Add sliced onions and cook slowly until golden brown, about 25-30 minutes.
- Stir in spinach and cook for 2-3 minutes until wilted. Optionally mix in nutritional yeast and season to taste.
Assemble the Rolls
- Preheat your oven to 375°F (190°C). Roll out the dough on a floured surface.
- Spread marinara sauce, then add caramelized onion and spinach filling. Roll tightly and cut into 1-inch sections.
Bake the Rolls
- Place rolls in a greased baking dish and cover. Allow to rise for 30 minutes before baking.
- Bake for 25-30 minutes until golden brown. Enjoy warm!
