Step-by-Step Instructions
  1. Preheat your oven to 350℉ (180℃) and butter a 9x13 inch baking dish.
  2. In a mixing bowl, sift together all-purpose flour, baking powder, and salt.
  3. In a separate bowl, beat 5 egg yolks with ⅓ cup of granulated sugar until pale and fluffy, then mix in ube halaya, ube extract, and whole milk.
  4. Fold the egg yolk mixture into the dry ingredients and then fold in the beaten egg whites.
  5. Pour the batter into the baking dish and bake for 30–35 minutes until a toothpick comes out clean.
  6. Prepare the tres leches mixture by combining evaporated milk, condensed milk, coconut milk, and ube extract.
  7. Poke holes in the cooled cake and pour the milk mixture over it, letting it soak.
  8. Make the topping by whipping heavy cream, coconut milk, and sugar until soft peaks form, then fold in ube extract.
  9. Spread the whipped topping over the cake and refrigerate for 2 additional hours before serving.
