  • 12 slices Wholegrain/Rye Bread Use fresh slices for best results.
  • 2 medium Carrots Shred finely.
  • 2 cups Purple Cabbage Finely chopped.
  • 1 cup Yogurt Strained overnight to remove excess moisture.
  • to taste Salt
  • to taste Black Pepper
For the Dressing
  • 1/2 cup Avocado Cilantro Dressing or Green Chutney Feel free to substitute with homemade versions.
  • to taste Fresh Herbs (Optional) Mint, dill, parsley, or basil.

Method
 

Step-by-Step Instructions
  1. Prepare the yogurt by straining it in a fine-mesh sieve lined with cheesecloth overnight in the fridge.
  2. Mix the vegetables by combining finely shredded carrots and chopped purple cabbage in a large bowl. Season with salt and pepper, and toss well.
  3. Assemble the sandwiches by spreading yogurt on one side of the bread, then adding dressing and vegetable filling.
  4. Cut the sandwiches into quarters or halves and arrange them on a platter.
