Method

Cooking Steps
  1. Prepare the Chicken: Rinse the boneless skinless chicken thighs and pat them dry. Place in a bowl or bag for marinating.
  2. Mix the Marinade: In a bowl, combine pineapple juice, soy sauce, brown sugar, ketchup, ginger paste, garlic paste, apple cider vinegar, cumin, black pepper, and paprika. Whisk until smooth.
  3. Marinate the Chicken: Pour the marinade over the chicken, ensure all pieces are coated, and refrigerate for at least 4 hours or overnight.
  4. Reserve Marinade for Glazing: Reserve ½ cup of marinade before removing chicken. Heat this reserved marinade if used as glaze.
  5. Preheat the Grill: Preheat your grill to medium-high heat (about 400°F) for 20 minutes and oil the grates.
  6. Grill the Chicken: Place chicken on the grill, cook for 10 minutes, flip and cook for another 10 minutes or until internal temperature is 165°F.
  7. Grill the Pineapple: Grill pineapple rings until golden and caramelized, enhancing natural sweetness.
  8. Finish with Marinade: Brush the reserved marinade over grilled chicken before serving.
