Steps
- Preheat your oven to 400°F (200°C) and grease a muffin tin.
- Cook the breakfast sausage in a skillet over medium heat until browned and crispy, about 5-7 minutes.
- Scramble the eggs in the same skillet for about 3-4 minutes until fully cooked.
- Combine pancake mix, water, maple syrup, salt, and pepper in a mixing bowl. Fold in cooked sausage, scrambled eggs, and cheese.
- Pour about 1/4 cup of the batter into each muffin cup.
- Bake for 16-18 minutes until muffins are golden brown and a toothpick comes out clean.
- Cool in the tin for 5-6 minutes before serving warm with extra maple syrup.
