Preparation
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Wash and peel the sweet potatoes, then slice them into 1/4-inch rounds.
- Arrange the sweet potato rounds in a single layer on the prepared baking sheet.
- Drizzle with olive oil, sprinkle salt and black pepper, and toss gently to coat.
- Roast the sweet potato rounds for 20-25 minutes, flipping halfway through.
- Top each round with a slice of brie and return to the oven for 5 minutes.
- Sprinkle cranberries and pecans on top before serving warm.
