Ingredients
  

For the Gazpacho
  • 4 ears Sweet Corn or frozen corn
  • 1 medium Cucumber peeled and deseeded
  • 1 medium Yellow Bell Pepper or green bell pepper
  • 1 cup Cherry Tomatoes heirloom recommended
  • 1 small Shallot or red onion
  • 2 cloves Garlic adjust to taste
  • 1 small Jalapeno deseeded for mild heat
  • 2 tablespoons Olive Oil or any neutral oil
  • 2 tablespoons Lemon Juice or lime juice
  • 1 tablespoon Sherry Vinegar or mild white wine vinegar
  • 1 teaspoon Kosher Salt adjust to taste

Method
 

Preparation Steps
  1. Slice the kernels off the sweet corn cobs and scrape to collect the creamy pulp.
  2. Peel the cucumber, remove seeds, and chop into smaller pieces.
  3. Prepare the yellow bell pepper by removing seeds and slicing into small pieces.
  4. Peel and finely chop the shallot and garlic; prepare jalapeno if using.
  5. In a blender, combine all prepared vegetables and blend on high until smooth.
  6. Add olive oil, lemon juice, sherry vinegar, and kosher salt; blend again until integrated.
  7. Adjust consistency with water or olive oil if too thick, blend briefly.
  8. Transfer to a container and refrigerate for at least 2 hours before serving.
  9. Taste and adjust seasoning before serving chilled, garnished with reserved corn and toppings.
