Method
 

Step‑by‑Step Instructions
  1. Generously season the beef short ribs with salt and pepper, let rest for 15 minutes.
  2. Heat olive oil in a skillet over medium-high heat, sear ribs for 3-4 minutes on each side.
  3. Sauté sliced onion in the same skillet for 3-4 minutes until softened.
  4. Add minced garlic and cook for 30 seconds; stir in beef broth, red wine, soy sauce, Worcestershire sauce, tomato paste, and brown sugar. Simmer for 2 minutes.
  5. Pour the sauce over the seared ribs in the crockpot.
  6. Cover and cook on low for 8-10 hours or high for 4-6 hours until fork-tender.
  7. Remove ribs, skim fat from the sauce, and reduce in a saucepan if desired.
  8. Plate the ribs and spoon reduced sauce over them; serve with sides.
