Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (204°C) and line a baking sheet with parchment paper.
  2. Lay salmon fillets skin-side down on a cutting board and slice lengthwise to create pockets.
  3. Brush salmon with 1 tablespoon of olive oil and season generously with salt and pepper.
  4. Heat remaining olive oil in a skillet over medium heat, add spinach, seasonings, and sauté until wilted.
  5. Turn off heat and stir in roasted red peppers, feta cheese, and Parmesan until mixed.
  6. Spoon the spinach and feta mixture into the salmon pockets evenly.
  7. Place stuffed salmon on the baking sheet and bake for 12-17 minutes until cooked through.
  8. Let salmon rest for a couple of minutes before serving with suggested sides.
