- Preheat your oven to 350°F (175°C) and prepare an 8-inch baking pan.
- Mix the dry ingredients: oats, flour, cinnamon, salt, baking powder, and sugar in a large mixing bowl.
- Pour in the oil or melted butter and combine to create a crumbly dough.
- Press two-thirds of the oat mixture into the bottom of the prepared baking pan.
- In a separate bowl, mix diced strawberries with cornstarch and maple syrup until coated.
- Spread the strawberry filling over the pressed oat base, then sprinkle the reserved oat mixture on top.
- Bake in the preheated oven for 45 minutes until golden brown.
- Cool in the pan for 15 minutes, then refrigerate for 1 hour before cutting.
