Preparation Steps
  1. Thaw the puff pastry according to the package instructions—either 30-60 minutes at room temperature or overnight in the fridge. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine room-temperature cream cheese, white sugar, and vanilla extract. Beat until smooth and creamy. Add red food coloring if desired.
  3. On a well-floured surface, unfold the puff pastry and roll it out to about 1/4 inch thick. Use a heart-shaped cutter to cut out hearts.
  4. Place the hearts on the prepared baking sheet. Spoon 1-2 tablespoons of cream cheese filling in the center and top with diced strawberries.
  5. Whisk together the egg and cold water. Use a pastry brush to apply the egg wash around the edges of each heart.
  6. Bake for 12-15 minutes or until golden-brown. Rotate the sheet halfway through for even baking.
  7. Allow to cool for a few minutes before transferring to a wire rack. Optionally, dust with powdered sugar or glaze.
