Steps for Preparation
- In a mixing bowl, combine softened cream cheese with granulated sugar, ground cinnamon, and vanilla extract. Mix until light and creamy for about 2-3 minutes.
- Rinse and pat dry fresh strawberries, then slice evenly into thin rounds.
- Spread the cream cheese filling over one side of a fajita-size flour tortilla, leaving a small border around the edges. Layer the sliced strawberries on top.
- Melt 1-2 tablespoons of unsalted butter in a skillet over medium heat. Sprinkle a pinch of sugar and cinnamon into the melted butter, then place the assembled tortilla into the skillet, cooking for about 2-3 minutes.
- Once golden brown, fold the quesadilla in half, remove from skillet, drizzle with honey if desired, and cut into wedges to serve immediately.
