Step-by-Step Instructions
  1. Prepare Spinach & Garlic: Wash 2 cups of fresh spinach and chop it finely. Mince 2 cloves of garlic and set aside.
  2. Mix Ingredients: In a large mixing bowl, combine ground beef, chopped spinach, breadcrumbs, Parmesan cheese, parsley, minced garlic, egg, salt, and pepper. Mix until well combined.
  3. Shape Meatballs: Take portions of the meat mixture and flatten them. Place a small cube of mozzarella in the center, fold around it, and roll into a ball.
  4. Brown Meatballs: Heat olive oil in a skillet over medium heat. Add meatballs and sear for 5-7 minutes until golden brown.
  5. Bake: Preheat oven to 375°F (190°C). Transfer meatballs to a baking dish and pour marinara sauce over them. Bake for 15-20 minutes until cooked through.
