- In a large mixing bowl, combine shredded chicken, cream cheese, diced sausage (if using), green onions, cheddar cheese, hot sauce, and Cajun seasoning. Stir until well combined and creamy.
- Take an egg roll wrapper and lay it on a clean surface with a corner pointing toward you. Spoon about 2 tablespoons of the filling onto the bottom corner, fold the corner over the filling, tuck in the sides tightly, and roll it up to seal.
- In a deep skillet, pour in about 2 inches of vegetable oil and heat it over medium-high until it reaches 350°F. Test readiness by dropping a small piece of wrapper into the oil.
- Carefully place 3-4 egg rolls in the hot oil and fry for 3–4 minutes or until golden brown and crispy, turning occasionally. Drain on paper towels.
- Plate the fried egg rolls and serve immediately with dipping sauces like ranch, blue cheese, or remoulade.
