Step‑by‑Step Instructions
  1. In a large mixing bowl, combine shredded chicken, cream cheese, diced sausage (if using), green onions, cheddar cheese, hot sauce, and Cajun seasoning. Stir until well combined and creamy.
  2. Take an egg roll wrapper and lay it on a clean surface with a corner pointing toward you. Spoon about 2 tablespoons of the filling onto the bottom corner, fold the corner over the filling, tuck in the sides tightly, and roll it up to seal.
  3. In a deep skillet, pour in about 2 inches of vegetable oil and heat it over medium-high until it reaches 350°F. Test readiness by dropping a small piece of wrapper into the oil.
  4. Carefully place 3-4 egg rolls in the hot oil and fry for 3–4 minutes or until golden brown and crispy, turning occasionally. Drain on paper towels.
  5. Plate the fried egg rolls and serve immediately with dipping sauces like ranch, blue cheese, or remoulade.
