Step-by-Step Instructions
  1. Press firm tofu to remove moisture for about 15 minutes, then cube and toss in cornstarch.
  2. Heat vegetable oil in a skillet over medium-high heat until shimmering (about 2 minutes).
  3. Add cornstarch-coated tofu to the skillet in a single layer and fry until golden brown (3-4 minutes per side).
  4. In the same skillet, sauté minced garlic and grated ginger for 1-2 minutes until fragrant.
  5. Pour in coconut milk, soy sauce, and lime juice; bring to a gentle simmer for 3-5 minutes.
  6. Add crispy tofu back into the skillet, gently toss in the sauce, and simmer for 2-3 minutes.
  7. Cook rice or noodles according to package instructions; set aside.
  8. Serve tofu over rice or noodles, garnished with cilantro and chopped peanuts.
