Ingredients
  

For the Beef
  • 1 pound Ground Beef Substitute with ground turkey or chicken if desired.
  • 2 tablespoons Soy Sauce Opt for low-sodium for a healthier choice.
  • 2 tablespoons Gochujang (Korean chili paste) Can be swapped with Sriracha for a milder taste.
  • 3 cloves Garlic Finely minced.
  • 1 inch Ginger Fresh or powdered; fresh is preferred.
  • 2 tablespoons Sesame Oil Substitute olive oil if needed.
For the Cucumber Salad
  • 2 C Cucumbers English cucumbers recommended.
  • 2 tablespoons Rice Vinegar Apple cider vinegar can be used as a substitute.
  • 2 tablespoons Sesame Seeds Can be omitted or swapped with chopped nuts.
  • 3 stalks Green Onions Chives can be used as an alternative.

Method
 

Preparation
  1. Finely mince garlic and ginger. Wash and dice cucumbers into bite-sized pieces, setting them aside.
  2. Heat sesame oil in a skillet over medium-high heat.
Cooking
  1. Add ground beef to the skillet, breaking it apart. Cook until browned, about 5 minutes.
  2. Add minced garlic and ginger to skillet, cook for 1 minute.
  3. Incorporate gochujang, soy sauce, and more sesame oil, cook for 2 minutes.
Cucumber Salad
  1. In a bowl with cucumbers, mix in rice vinegar and sesame seeds, toss gently.
Serving
  1. Plate the beef with the cucumber salad, drizzling more sesame oil if desired.
