Preparation Steps
- In a mixing bowl, combine ½ cup mayonnaise, 1 to 2 tablespoons hot sauce, 1 teaspoon Dijon mustard, 1 teaspoon lime juice, ½ teaspoon garlic powder, and ½ teaspoon smoked paprika. Blend until smooth and creamy. Optionally stir in finely chopped pickled jalapeños.
- Take 1 pound of ground beef and divide it into two loose balls. Season each with salt and pepper.
- Preheat your grill or grill pan to high heat.
- Place the beef balls on the grill and smash them to about ½ inch thick. Cook for about 3 minutes until edges brown.
- Flip the patties and immediately place a slice of cheddar cheese on each. Cook for an additional minute until cheese is melted.
- Lightly toast the brioche burger buns cut-side down on the grill until golden brown.
- Assemble the burger starting with the bottom half of the bun spread with spicy mayo, followed by the patty, pickled jalapeños, and crispy fried onions. Top with the other half of the bun.
