For the Pasta
  • 8 ounces Penne Pasta feel free to swap for your favorite pasta.
For the Sauce and Vegetables
  • 2 tablespoons Grass-fed Butter adds richness.
  • 1 cup Bell Peppers red or yellow work beautifully.
  • 1 cup Asparagus or substitute with broccoli or cauliflower.
  • 1 cup Organic Frozen Peas fresh peas can add a crunch.
  • 1 medium Sweet Onion or red/yellow onions.
  • 2 cloves Garlic fresh minced for best taste.
  • 1 cup Heavy Cream light cream can substitute.
  • 1 cup Parmesan Cheese freshly grated is best.
  • 2 tablespoons Chipotle Peppers in Adobo Sauce adjust for spice preference.
  • 1 teaspoon Paprika adds mild peppery flavor.
  • 0.5 teaspoon Cayenne Pepper optional for extra heat.
  • 0.25 cup Shaved Parmigiano for garnishing.
For Garnish
  • 1/4 cup Fresh Parsley or Cilantro adds fresh flavor.

Method
 

Cooking Steps
  1. Preheat a large skillet over medium heat, drizzle with avocado oil, and cook seasoned chicken breasts until golden brown, about 6-7 minutes per side. Drizzle with honey, glaze, then remove from heat, slice, and set aside.
  2. In a large pot, bring water to a rolling boil, add salt, and cook penne pasta according to package instructions until al dente, around 8-10 minutes. Reserve ½ cup of starchy pasta water before draining.
  3. Using the same skillet, add avocado oil and butter, sauté sweet onion for 3-4 minutes, stir in garlic, bell peppers, and asparagus, cooking until tender, about 3-4 minutes.
  4. In a blender, combine heavy cream, chipotle peppers, paprika, and parmesan cheese. Blend until smooth.
  5. Pour the blended sauce and reserved pasta water into the skillet with vegetables, stir well, and simmer for 4-5 minutes to thicken. Season with salt and pepper.
  6. Toss cooked penne pasta and sliced chicken in the skillet until well-coated with sauce and let it cook for another minute.
  7. Serve the pasta garnished with fresh parsley or cilantro and shaved parmesan. Enjoy immediately!
