- In your slow cooker, place the chuck roast, BBQ sauce, half of the crispy bacon, the sliced onion, Worcestershire sauce, minced garlic, brown sugar, and half of the diced jalapenos. Mix well.
- Carefully remove the chuck roast from the slow cooker, place it on a cutting board, and shred the beef with two forks. Drain most of the cooking liquid from the slow cooker but reserve about a cup.
- Place a slice of gooey Colby jack cheese on the bottom half of each sandwich bun. Pile on the shredded beef, remaining crispy bacon, jalapenos, and crispy fried onions. Top with the other half of the bun.
