For the Melty Goodness
  • 2 cups Colby Jack Cheese Substitute with any melting cheese like cheddar.
For the Sandwich Assembly
  • 6 buns Sandwich Buns Whole grain or gluten-free buns can be swapped.
  • 1 cup Crispy Fried Onions Use homemade crispy onions for a fresh flavor.

Equipment

  • Slow Cooker

Method

Step‑by‑Step Instructions
  1. In your slow cooker, place the chuck roast, BBQ sauce, half of the crispy bacon, the sliced onion, Worcestershire sauce, minced garlic, brown sugar, and half of the diced jalapenos. Mix well.
  2. Carefully remove the chuck roast from the slow cooker, place it on a cutting board, and shred the beef with two forks. Drain most of the cooking liquid from the slow cooker but reserve about a cup.
  3. Place a slice of gooey Colby jack cheese on the bottom half of each sandwich bun. Pile on the shredded beef, remaining crispy bacon, jalapenos, and crispy fried onions. Top with the other half of the bun.
  4. Serve your Slow Cooker Cowboy Sandwiches immediately while hot, pairing with coleslaw or potato salad if desired.
