  • 1 lb Boneless, Skinless Chicken Breasts
  • 3 cloves Garlic (minced)
  • 1/4 cup Fresh Lemon Juice
  • 1 medium Onion (diced)
  • 1 cup Water
  • 2 tbsp Olive Oil
  • 2 tbsp Red Wine Vinegar
  • 2 tsp Oregano
  • 1/2 tsp Allspice
  • 1 tsp Lemon Pepper
For the Tzatziki Sauce
  • 1 cup Fat-Free Plain Greek Yogurt
  • 1/2 cup Grated Cucumber
  • 1/4 cup Chopped Fresh Parsley
  • 1 tsp Salt (to taste)

Method
 

Step-by-Step Instructions
  1. Prepare the Slow Cooker by spraying the interior with non-stick spray and placing the chicken breasts inside.
  2. Mix the Marinade by combining garlic, lemon juice, onion, water, olive oil, red wine vinegar, oregano, allspice, and lemon pepper in a bowl.
  3. Pour the Marinade over the chicken and spread the diced onions on top.
  4. Set the cooker to HIGH for 3-4 hours or LOW for 6-8 hours until the chicken shreds easily.
  5. Prepare the Tzatziki Sauce by mixing yogurt, grated cucumber, parsley, and salt in a bowl. Refrigerate for at least an hour.
  6. Once cooked, shred the chicken in the slow cooker.
  7. Serve the chicken in warm pita bread topped with fresh veggies and tzatziki.
