Step-by-Step Instructions for Crockpot Chicken Tacos
  1. Start by preparing your 6 or 7-quart crockpot. Lightly spray the interior with non-stick cooking spray.
  2. Place the boneless, skinless chicken breasts into the bottom of the crockpot. Evenly sprinkle your taco seasoning over the chicken.
  3. Pour the can of Rotel on top, followed by squeezing the juice of one fresh lime over everything.
  4. Cover the crockpot with its lid and set it to cook on high for 3-4 hours or low for 7-8 hours.
  5. Once cooked, carefully drain excess liquid from the crockpot. Using two forks, shred the chicken right in the pot.
  6. Warm up your tortillas while the chicken rests. Fill each tortilla with the shredded chicken and top with your favorite ingredients.
