- In a cocktail shaker, combine ½ cup of fresh raspberries with 1 ounce of freshly squeezed lime juice and 1 ounce of light rum. Muddle gently for about 30 seconds.
- Add ice to the shaker and shake vigorously for about 15 seconds. Strain the mixture over a glass filled with crushed ice.
- In a separate shaker, combine 2 ounces of cream of coconut, 2 ounces of pineapple juice, and the remaining 1 ounce of rum. Shake for about 15 seconds until frothy.
- Pour the coconut mixture over the back of a spoon onto the raspberry layer in the glass to create layers.
- Garnish with fresh raspberries and a lime wheel. Serve immediately.
