Method
 

Preparation Steps
  1. Rinse the sushi rice under cold water until it runs clear. Combine with water in a rice cooker and cook.
  2. Spread cooked rice on a tray and mix with rice vinegar and mirin while warm. Allow to cool.
  3. Dice the tuna, then whisk soy sauce, rice vinegar, honey, and sesame oil. Marinate tuna in mixture for 15 minutes.
  4. Dice mango, cucumber, jalapeno, red onion, and orange bell pepper. Toss with salt and lime juice.
  5. In serving dishes, layer sushi rice, marinated tuna, and mango cucumber salad. Garnish with optional toppings.
