Step-by-Step Instructions
  1. Heat the oil in a medium pot over medium heat until shimmering.
  2. Sauté ginger and garlic for about 2 minutes until fragrant and golden.
  3. Add ground beef and cook until evenly browned, about 5 minutes.
  4. Stir in tomato paste and cook for an additional 2 minutes.
  5. Pour in chicken stock, sugar, salt, and white pepper, then add vinegar. Bring to a simmer.
  6. Add enoki mushrooms and white parts of scallions, simmer for at least 15 minutes.
  7. Taste and adjust seasoning. Serve garnished with the green parts of the scallions.
