Method
 

Directions
  1. Preheat your oven to 375°F (190°C). Gather your ingredients.
  2. Lay the flank steak flat and slice horizontally to create a pocket.
  3. In a bowl, mix chopped spinach, ricotta, mozzarella, sun-dried tomatoes, garlic, oregano, salt, and pepper.
  4. Spoon the stuffing mixture into the steak pocket evenly.
  5. Roll the steak tightly and secure with kitchen twine.
  6. Heat olive oil in a skillet over medium-high heat, sear steak for 4-5 minutes per side.
  7. Transfer the skillet to the oven and bake for 20-25 minutes, until the internal temperature reaches 130°F for medium-rare.
  8. Remove from the oven, allow resting for 10 minutes, then slice into rounds.
