Step-by-Step Instructions
  1. Prep Chicken: Rinse the whole chicken under cold water, then pat it dry. Trim any excess fat and tie the legs with kitchen twine.
  2. Prepare Braising Sauce: In a large pot, combine water, light and dark soy sauce, apple juice, and rock sugar. Add ginger, garlic, star anise, cinnamon, bay leaves, Sichuan peppercorns, and green onion. Bring to a gentle boil, then simmer for 5 minutes.
  3. Braise Chicken: Lower the seasoned chicken into the pot, breast-side down, and maintain a gentle simmer. Cover and let cook for 10–15 minutes.
  4. Flip and Simmer: After initial cooking time, flip the chicken and continue to simmer for an additional 15 minutes, spooning sauce over the chicken.
  5. Rest in Sauce: Turn off the heat but leave the chicken in the pot for 30–40 minutes to retain juiciness.
  6. Finish and Serve: Remove the chicken and brush with sesame oil. Let rest for 10 minutes before chopping. Serve warm with sauce over rice or noodles.
