Step-by-Step Instructions
- Prep Chicken: Rinse the whole chicken under cold water, then pat it dry. Trim any excess fat and tie the legs with kitchen twine.
- Prepare Braising Sauce: In a large pot, combine water, light and dark soy sauce, apple juice, and rock sugar. Add ginger, garlic, star anise, cinnamon, bay leaves, Sichuan peppercorns, and green onion. Bring to a gentle boil, then simmer for 5 minutes.
- Braise Chicken: Lower the seasoned chicken into the pot, breast-side down, and maintain a gentle simmer. Cover and let cook for 10–15 minutes.
- Flip and Simmer: After initial cooking time, flip the chicken and continue to simmer for an additional 15 minutes, spooning sauce over the chicken.
- Rest in Sauce: Turn off the heat but leave the chicken in the pot for 30–40 minutes to retain juiciness.
- Finish and Serve: Remove the chicken and brush with sesame oil. Let rest for 10 minutes before chopping. Serve warm with sauce over rice or noodles.

Notes
Ensure you don’t overcook the chicken for best results. Adjust timing if using smaller cuts to retain tenderness.
