- Preheat your oven to 425°F (220°C) and prepare a parchment-lined baking tray.
- Grate the super firm tofu using the largest holes of a box grater and spread it evenly onto the prepared baking tray.
- In a mixing bowl, combine cornstarch, smoked paprika, garlic powder, coriander, fennel seeds, allspice, white pepper, tamari, liquid smoke, and a drizzle of oil. Toss the grated tofu in the mixture.
- Bake the tofu for 15 minutes, toss gently, then return it to the oven for an additional 10 minutes or until golden brown.
- While baking, combine avocado, fresh herbs, grated garlic, lime juice, lime zest, and a pinch of salt in a bowl and mash until creamy.
- Assemble your sandwich by spreading avocado mixture on an English muffin half, topping with smoky shredded tofu and vegetables, then close with the other half.
- Wrap each sandwich tightly in parchment paper and foil to store in the fridge.
- To reheat, unwrap and place in a toaster oven or air fryer at 350°F (175°C) for 5-7 minutes.
