Preparation Steps
- Marinate the Chicken: Combine chicken breasts with olive oil, lemon juice, minced garlic, cumin, smoked paprika, curry powder, kosher salt, and black pepper in a large bowl. Cover and marinate in the fridge for at least 30 minutes, up to 24 hours.
- Preheat the Oven: Preheat your oven to 425°F (220°C) with a rack in the center.
- Prepare the Vegetables: Wash and slice bell peppers into strips. Spread them evenly on a large non-stick sheet pan.
- Combine & Roast: Place the marinated chicken in the center of the sheet pan with the bell peppers. Roast for 15 to 20 minutes until chicken reaches 165°F (74°C).
- Assemble the Pitas: Warm the pita bread, fill with roasted chicken and bell peppers, and top with tzatziki and additional toppings.
