Ingredients
  

For the Chicken Marinade
  • 4 pieces Chicken Breasts or chicken thighs
  • 2 tablespoons Olive Oil or avocado oil
  • 4 cloves Garlic minced
  • 2 tablespoons Lemon Juice freshly squeezed
  • 1 teaspoon Cumin
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Curry Powder
  • to taste Kosher Salt
  • to taste Black Pepper
For the Veggies
  • 2 pieces Bell Peppers mixed colors, sliced into strips
For the Tzatziki
  • 1 cup Tzatziki homemade or store-bought
For Serving
  • 4 pieces Pita Bread whole wheat or gluten-free
  • as desired Optional Add-Ons cucumbers, tomatoes, feta cheese, kalamata olives, red onions

Method
 

Preparation Steps
  1. Marinate the Chicken: Combine chicken breasts with olive oil, lemon juice, minced garlic, cumin, smoked paprika, curry powder, kosher salt, and black pepper in a large bowl. Cover and marinate in the fridge for at least 30 minutes, up to 24 hours.
  2. Preheat the Oven: Preheat your oven to 425°F (220°C) with a rack in the center.
  3. Prepare the Vegetables: Wash and slice bell peppers into strips. Spread them evenly on a large non-stick sheet pan.
  4. Combine & Roast: Place the marinated chicken in the center of the sheet pan with the bell peppers. Roast for 15 to 20 minutes until chicken reaches 165°F (74°C).
  5. Assemble the Pitas: Warm the pita bread, fill with roasted chicken and bell peppers, and top with tzatziki and additional toppings.
