Cooking Steps
  1. Season the chicken breasts with salt and pepper. Heat the olive oil in a skillet and sear the chicken for about 6 minutes on each side until cooked through. Remove and let rest.
  2. In a separate pot, combine white rice and chicken broth. Bring to a boil, then reduce heat and cover. Simmer for 18-20 minutes until liquid is absorbed. Let it rest covered for 5 minutes.
  3. Blend cilantro, lime juice, Greek yogurt, and garlic until smooth for the green sauce.
  4. Slice the rested chicken into bite-sized pieces. Fluff the cooked rice and place it on serving plates. Top with sliced chicken.
  5. Drizzle the green sauce over the chicken and rice. Garnish with extra cilantro if desired.
  6. Serve individually or family-style with a side of lime-dressed salad or roasted veggies.
