Method
 

Step-by-Step Instructions
  1. Rinse the red beans thoroughly under cold water and soak them overnight in a bowl filled with fresh water.
  2. In a large pot, heat butter and oil over medium heat. Add sliced andouille sausage and brown for about 5 minutes.
  3. Remove the browned sausage and set aside. In the same pot, add chopped onion, diced bell pepper, and celery. Sauté for 4 to 5 minutes until softened.
  4. Add minced garlic and cook for an additional minute.
  5. Return the browned sausage to the pot with soaked beans and smoked meat. Add bay leaves, chicken stock, and Worcestershire sauce. Stir well.
  6. Bring to a rolling boil, then reduce heat to low and cover partially. Simmer for 1.5 to 2 hours, stirring occasionally.
  7. Remove smoked meat, cool it, tear into pieces, and return to the pot.
  8. Mash a portion of the beans against the pot’s side to thicken the stew. Season with Cajun seasoning and black pepper.
  9. Simmer uncovered for an additional 15-20 minutes until the flavors meld.
