- Rinse the red beans thoroughly under cold water and soak them overnight in a bowl filled with fresh water.
- In a large pot, heat butter and oil over medium heat. Add sliced andouille sausage and brown for about 5 minutes.
- Remove the browned sausage and set aside. In the same pot, add chopped onion, diced bell pepper, and celery. Sauté for 4 to 5 minutes until softened.
- Add minced garlic and cook for an additional minute.
- Return the browned sausage to the pot with soaked beans and smoked meat. Add bay leaves, chicken stock, and Worcestershire sauce. Stir well.
- Bring to a rolling boil, then reduce heat to low and cover partially. Simmer for 1.5 to 2 hours, stirring occasionally.
- Remove smoked meat, cool it, tear into pieces, and return to the pot.
- Mash a portion of the beans against the pot’s side to thicken the stew. Season with Cajun seasoning and black pepper.
- Simmer uncovered for an additional 15-20 minutes until the flavors meld.
