Method
 

Preparation
  1. In a mixing bowl, combine warm water with active dry yeast and sugar. Stir and let sit for 5 minutes until foamy.
  2. Mix flour with salt in another bowl. Slowly pour in the yeast mixture and olive oil. Stir until combined.
  3. Knead the dough on a floured surface for 8-10 minutes until smooth and elastic. Let rise in an oiled bowl for 1 hour.
  4. In a mixing bowl, combine ricotta, mozzarella, Parmesan, garlic, basil, oregano, salt, and black pepper to create filling.
  5. Divide the dough into 4 portions and roll each into an 8-10 inch circle. Fill the calzones with the mixture.
  6. Preheat oven to 450°F (230°C) and place assembled calzones on a parchment-lined baking sheet.
  7. Bake for 15-18 minutes until golden brown and crispy. Let cool for 5 minutes before serving.
