Cooking Steps
- If using salted cod, rinse off excess salt and soak in cold water, refrigerating and changing water 2-3 times daily for 2-3 days.
- In a medium skillet, heat 2 tablespoons of olive oil over medium heat. Add crushed red pepper flakes and minced garlic, sauté for 1 minute.
- Incorporate halved cherry tomatoes, cooking for 9-12 minutes until softened. Pour in 1 cup of dry white wine, simmer, then stir in 2 tablespoons of capers, fresh basil, and lemon juice and zest. Season and cook for 2 more minutes.
- In the same skillet, heat another tablespoon of olive oil. Add seasoned cod fillets and cook for 3 minutes until golden brown, then flip to cook the other side for another 2-3 minutes.
- Drizzle the sauce over cooked cod and warm through for a minute. Serve immediately, garnished with extra basil if desired.
