  • 1 pound Salted Cod (Baccalà or Bacalao) Fresh cod can be used; skip desalting.

For the Sauce

  • 1 cup Cherry Tomatoes Can substitute with grape or sun-dried tomatoes.
  • 1 cup Dry White Wine Choose light varietals like pinot grigio.
  • 2 tablespoons Capers Chopped green olives can be a substitute.
  • 1 cup Fresh Basil Try oregano or parsley as alternatives.
  • 1 tablespoon Lemon Juice Brightens the flavor.
  • 1 teaspoon Lemon Zest
  • 1 teaspoon Sugar Optional for balancing sauce flavors.

Method
 

Cooking Steps
  1. If using salted cod, rinse off excess salt and soak in cold water, refrigerating and changing water 2-3 times daily for 2-3 days.
  2. In a medium skillet, heat 2 tablespoons of olive oil over medium heat. Add crushed red pepper flakes and minced garlic, sauté for 1 minute.
  3. Incorporate halved cherry tomatoes, cooking for 9-12 minutes until softened. Pour in 1 cup of dry white wine, simmer, then stir in 2 tablespoons of capers, fresh basil, and lemon juice and zest. Season and cook for 2 more minutes.
  4. In the same skillet, heat another tablespoon of olive oil. Add seasoned cod fillets and cook for 3 minutes until golden brown, then flip to cook the other side for another 2-3 minutes.
  5. Drizzle the sauce over cooked cod and warm through for a minute. Serve immediately, garnished with extra basil if desired.
