Method
 

Cooking Instructions
  1. Preheat the oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
  2. Season the chicken thighs with salt and pepper. Whisk together balsamic vinegar, honey, minced garlic, and a pinch of salt for the glaze.
  3. Place the seasoned chicken in the baking dish and pour the balsamic glaze over, ensuring even coating.
  4. Roast the chicken for 35-40 minutes until nicely browned and the internal temperature is at least 165°F (75°C).
  5. While the chicken roasts, boil salted water and cook chopped Yukon Gold potatoes until fork-tender (about 15-20 minutes).
  6. Drain the potatoes, return to the pot, and mash with goat cheese, butter, milk or cream, and season with salt and pepper.
  7. Prepare fresh carrots by chopping them and tossing with olive oil, salt, and pepper, then roast alongside the chicken for the last 20-25 minutes.
  8. Serve the chicken with goat cheese mashed potatoes and roasted carrots for a perfect meal.
