- Preheat the oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
- Season the chicken thighs with salt and pepper. Whisk together balsamic vinegar, honey, minced garlic, and a pinch of salt for the glaze.
- Place the seasoned chicken in the baking dish and pour the balsamic glaze over, ensuring even coating.
- Roast the chicken for 35-40 minutes until nicely browned and the internal temperature is at least 165°F (75°C).
- While the chicken roasts, boil salted water and cook chopped Yukon Gold potatoes until fork-tender (about 15-20 minutes).
- Drain the potatoes, return to the pot, and mash with goat cheese, butter, milk or cream, and season with salt and pepper.
- Prepare fresh carrots by chopping them and tossing with olive oil, salt, and pepper, then roast alongside the chicken for the last 20-25 minutes.
- Serve the chicken with goat cheese mashed potatoes and roasted carrots for a perfect meal.
